just desserts

I am always experimenting with no added  sugar desserts. Something that gives me that I just had dessert feel without the OMG I just had a bag of sugar side effect.  I made this one today and it was wonderful. I just adapted a traditional no bake cookie recipe.

2 bars high quality bakers chocolate

1/2 cup butter

1 tsp vanilla

1 tsp salt

1 cup peanut butter

3 cups oatmeal

1 jar fruit sweetened jelly

Heat the bakers chocolate, butter and peanut butter over a double boiler.  Add salt and vanilla. Remove from heat. Stir in the oatmeal. Mix well. Press mixture into a rectangular baking dish, and spread jar of fruit sweetened jelly on top. Chill for one hour. Cut into squares and serve with fresh whipped cream and honey if you want additional sweetness.
