This is my favorite dinner. Not only because it’s tasty, but because it’s so incredibly easy. With just seven ingredients, five minutes of active time, 30 minutes of cook time and one pan, it’s my go-to when I need to get dinner on the table fast. And since the active time is only five minutes. I can cook and help the kiddos with their homework.
1 bunch Asparagus
1 pkg Cherry Tomatoes
1 tbsp Olive Oil
2 tbsp butter
1 jar Pesto
2 Chicken breasts
This recipe is so versatile because you can use whatever chicken you want, whatever pasta you happen to have on hand and whatever vegetables are in season. I used cheese ravioli because it’s what I had, but I usually use fettuccini.
Preheat oven to 350℉. Place cherry tomatoes and asparagus on a cookie sheet. Sprinkle with salt and pepper and cover with olive oil. Stir to coat. Place chicken breasts in foil and sprinkle with salt and pepper. Place butter on top and fold foil to make a tight package around the chicken. Place on cookie sheet with tomatoes and asparagus. Place sheet with chicken and vegetables in oven for 30 minutes. While chicken and vegetables are roasting, cook pasta according to package directions and set aside.
Place cooked pasta on plate and top with chicken and pesto. Place tomatoes and asparagus on side. Enjoy! You just made dinner.
